Ah, at last…Thanksgiving is finally here. It’s the time to show appreciation, spend time with family, and most importantly, EAT.
It’s not all fun & games though, oh no. Hosting a Thanksgiving dinner can be a big challenge too. Between juggling numerous dishes, making the home presentable, and patiently managing that one family member that always gets their hands into everything, Thanksgiving can seem more like a chore than it should.
So whenever I can find an easy but irresistible Thanksgiving recipe, you better bet that it’s going on the table. And what’s more irresistible than baked brie?

Raspberry Baked Brie

Begin by preheating your oven to 350°F.
Over medium heat, add walnuts, butter, and sugar to a small pot, and cook for about 5 minutes, stirring frequently so sugar doesn’t burn. Once done, transfer the walnuts to a baking sheet lined with parchment paper and spread them out so that they don’t stick together. Let it cool.
If you’re feeling lazy, like I usually am, you can buy the walnuts already candied. Although, fresh is always better…just sayin’.
Next, place the brie in a rimmed baking dish, cast iron skillet, or brie baker. Sprinkle some brown sugar on top and bake for 12-15 minutes or until heated through.
If you’re using a brie baker, it will be closer to 15 minutes depending on your oven.
Once baked, remove from the oven and let it cool for 5 minutes.
While the brie sits, mix the honey and balsamic vinegar in a bowl and microwave for 1 minute. Ding! Now stir, add raspberries and toss to coat. Let raspberries sit in mixture for 2-3 minutes.

Now it’s serving time, baby! Sprinkle the candied walnuts on top of the brie, scoop the raspberries out and arrange nicely on top of walnuts. Finally, drizzle the honey-balsamic on top for that finishing touch.
Grab some crackers or slice a crispy baguette, dip, and devour!

1 wheel of brie
2 Tbsp light brown sugar
1/4 cup honey

1/3 cup raspberries
Bread or crackers for dipping

Notes
Switch it up! Use candied pecans instead of walnuts; use blueberries or blackberries instead of raspberries; use maple syrup instead of honey-balsamic. The world is your oyster!
